Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Servings: 4

Ingredients:

  • 1 medium head of cabbage
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (panko or traditional)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Oil for frying (vegetable or sunflower oil)

Instructions

  • Prepare the Cabbage: Remove outer leaves and cut the cabbage into thick slices or wedges (about 1-inch thick).
  • Blanch the cabbage slices in boiling salted water for 3–5 minutes until slightly softened but still firm. Drain and pat dry.
  • Set Up Breading Station:
    • In three shallow bowls:
    • Place the flour in the first bowl.
    • Beat the eggs with a pinch of salt in the second bowl.
    • Mix breadcrumbs with garlic powder, paprika, salt, and pepper in the third bowl.
  • Bread the Cabbage:
    • Dip each cabbage slice in flour, coating all sides.
    • Next, dip it into the beaten eggs, allowing excess to drip off.
    • Finally, coat it in the breadcrumb mixture, pressing gently to adhere.
  • Fry the Schnitzels:
    • Heat about 1/4 inch of oil in a large skillet over medium heat.
    • Fry the breaded cabbage slices in batches for 3–4 minutes per side until golden brown and crispy.
    • Transfer to a paper towel-lined plate to drain excess oil.
  • Serve: Serve hot with lemon wedges, sour cream, or a creamy dipping sauce. Pair it with mashed potatoes or a fresh salad for a complete meal.
  • Enjoy this crispy, golden twist on schnitzel!
