These cabbage and sweet potato tacos are a vibrant, plant-based twist on traditional tacos. Instructions: Roast the Sweet Potatoes: Preheat the oven to 400°F (200°C). On a baking sheet, toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Roast for 20–25 minutes, or until tender and lightly browned, stirring halfway through. Sauté the Cabbage: While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant. Add the shredded cabbage and sauté for 5–7 minutes, stirring occasionally, until softened. Stir in lime juice and season with salt and pepper. Make the Lime Crema: In a small bowl, whisk together the sour cream or yogurt, lime juice, lime zest, garlic powder, salt, and pepper until smooth. Assemble the Tacos: Warm the tortillas in a dry skillet or microwave. Once the sweet potatoes are roasted, assemble the tacos by adding a few spoonfuls of sautéed cabbage to each tortilla, followed by roasted sweet potatoes. Drizzle with lime crema and top with avocado, cilantro, red onion, and hot sauce, if desired.
