A Classic Comfort Meal
Corned beef and cabbage is a hearty, flavorful dish that’s perfect for St. Patrick’s Day or any day you’re craving a satisfying one-pot meal. The slow-cooked corned beef pairs beautifully with tender cabbage, potatoes, and carrots.

Ingredients:
- 1 corned beef brisket (3–4 lbs), with spice packet
- 1 large onion, quartered
- 4–5 carrots, peeled and cut into chunks
- 1 lb small potatoes (Yukon Gold or red), halved
- 1 small head of green cabbage, cut into wedges
- 4 cups water or beef broth
- 1 bay leaf
- 1 tsp black peppercorns
Instructions
- Prepare the Corned Beef:
- Rinse the corned beef under cold water to remove excess brine.
- Place the brisket in a large pot or slow cooker with the spice packet.
- Add Vegetables (in Stages):
- Add the onion, bay leaf, and peppercorns to the pot.
- Pour in enough water or broth to cover the brisket.
- Cover and simmer over low heat for 2.5–3 hours (or cook on low in a slow cooker for 6–7 hours).
- Add Root Vegetables:
- Add the carrots and potatoes to the pot.
- Cook for another 30 minutes (stovetop) or 1 hour (slow cooker).
- Add the Cabbage:
- Place the cabbage wedges on top of the other ingredients.
- Cook for 15–20 minutes (stovetop) or 30 minutes (slow cooker) until tender.
- Serve:
- Remove the corned beef and let it rest for 10 minutes before slicing against the grain.
- Serve slices of corned beef alongside the cabbage, potatoes, and carrots.
- Spoon some cooking liquid over the dish for added flavor.
