Ingredients:

For the Fritters:

  • 3 cups shredded cabbage
  • 1 small carrot, grated
  • 1 small onion, finely diced
  • 2 eggs
  • 1/3 cup all-purpose flour (or gluten-free alternative)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil for frying

For the Herb Dip:

  • 1/2 cup plain Greek yogurt (or sour cream)
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh dill
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • Salt and pepper to taste

 Instructions: Prepare the Fritter Mixture: In a large bowl, combine shredded cabbage, grated carrot, diced onion, eggs, flour, Parmesan (if using), garlic powder, smoked paprika, salt, and pepper. Mix until well combined. Cook the Fritters: Heat a thin layer of olive oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture per fritter into the pan, flattening slightly. Cook for 3–4 minutes on each side until golden brown and crispy. Remove and drain on paper towels. Make the Herb Dip: In a small bowl, mix the Greek yogurt, parsley, dill, minced garlic, lemon juice, salt, and pepper. Stir until smooth and well combined. Serve: Arrange the fritters on a serving plate and serve hot with the herb dip on the side. Enjoy!
