Ingredients:

  • 1 medium head of red cabbage, shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 large carrot, peeled and diced
  • 1 medium potato, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp ground cumin (optional)
  • 1 tsp smoked paprika (optional)
  • Salt and pepper, to taste
  • Fresh parsley or sour cream for garnish

 

Instructions

  • Prepare the Vegetables:
    • Shred the red cabbage.
    • Dice the onion, garlic, carrot, and potato.
  • Sauté Aromatics:
    • Heat olive oil in a large pot over medium heat.
    • Add the onion and garlic, and sauté until softened (about 3 minutes).
  • Cook the Vegetables:
    • Add the cabbage, carrot, and potato to the pot. Stir well to combine.
    • Sprinkle in the cumin and paprika (if using).
  • Simmer the Soup:
    • Pour in the broth and bring to a boil.
    • Reduce the heat to low, cover, and let it simmer for 30 minutes, or until the vegetables are tender.
  • Blend (Optional):
    • For a creamy texture, blend the soup using an immersion blender or in batches with a regular blender.
    • Leave some chunks for texture if desired.
  • Finish and Season:
    • Stir in the apple cider vinegar or lemon juice to brighten the flavor.
    • Adjust seasoning with salt and pepper.
  • Serve:
    • Ladle the soup into bowls.
    • Garnish with fresh parsley or a dollop of sour cream.
