- 1 tbsp olive oil
- 1 tbsp apple cider vinegar or lemon juice
- 1 tsp ground cumin (optional)
- 1 tsp smoked paprika (optional)
- Salt and pepper, to taste
- Fresh parsley or sour cream for garnish
Instructions
- Prepare the Vegetables:
- Shred the red cabbage.
- Dice the onion, garlic, carrot, and potato.
- Sauté Aromatics:
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, and sauté until softened (about 3 minutes).
- Cook the Vegetables:
- Add the cabbage, carrot, and potato to the pot. Stir well to combine.
- Sprinkle in the cumin and paprika (if using).
- Simmer the Soup:
- Pour in the broth and bring to a boil.
- Reduce the heat to low, cover, and let it simmer for 30 minutes, or until the vegetables are tender.
- Blend (Optional):
- For a creamy texture, blend the soup using an immersion blender or in batches with a regular blender.
- Leave some chunks for texture if desired.
- Finish and Season:
- Stir in the apple cider vinegar or lemon juice to brighten the flavor.
- Adjust seasoning with salt and pepper.
