Ingredients:
For the Rolls:
- 1 cup green cabbage, thinly shredded
- 1 medium carrot, julienned
- 1/2 cup cucumber, julienned
- 1/2 cup red bell pepper, thinly sliced
- 1/4 cup fresh cilantro or mint leaves
- 1/4 cup cooked shrimp, shredded chicken, or tofu (optional)
- 6–8 rice paper wrappers
For the Peanut Dipping Sauce:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1/4 cup water (adjust for desired consistency)
- 1 teaspoon lime juice or vinegar
- 1/2 teaspoon chili flakes (optional)
Instructions
- Prepare the Ingredients:
- Wash and prep all the vegetables.
- Arrange the shredded cabbage, carrots, cucumber, bell pepper, herbs, and protein in separate sections for easy assembly.
- Soften the Rice Paper Wrappers:
- Fill a large shallow dish or bowl with warm water.
- Submerge one rice paper wrapper for about 10 seconds until it softens.
- Place it on a clean, damp surface or kitchen towel.
- Assemble the Rolls:
- Place a small portion of cabbage, carrots, cucumber, bell pepper, and optional protein in the center of the wrapper.
- Add a few herbs for flavor.
- Fold the sides over the filling, then roll tightly from the bottom up.
- Repeat with the remaining wrappers and filling.
- Make the Dipping Sauce:
- In a small bowl, whisk together peanut butter, soy sauce, hoisin sauce, sesame oil, water, lime juice, and chili flakes (if using) until smooth.
- Adjust water for desired consistency.
- Serve:
- Arrange the rolls on a plate and serve with the dipping sauce on the side.
