Ingredients:
- 1 medium head of green or red cabbage, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon honey or maple syrup
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt and black pepper, to taste
- 1 sheet puff pastry, thawed
- 1 egg, lightly beaten (for egg wash)
Instructions
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Caramelize the Cabbage:
- Heat olive oil and butter in an ovenproof skillet over medium heat.
- Add the cabbage and cook, stirring, for 8–10 minutes until it softens and starts to caramelize.
- Stir in honey, balsamic vinegar, thyme, salt, and pepper, and cook for an additional 2–3 minutes.
- Assemble the Tarte Tatin:
- Spread the cabbage evenly in the skillet.
- Lay the puff pastry sheet over the top, tucking the edges into the skillet.
- Brush the pastry with the beaten egg.
- Bake:
- Place the skillet in the preheated oven and bake for 25–30 minutes, or until the pastry is golden and puffed.
- Invert and Serve:
- Remove the skillet from the oven and let it cool for 5 minutes.
- Carefully invert the tarte onto a serving plate.
