Ingredients:

  • 1 medium head of green or red cabbage, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and black pepper, to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, lightly beaten (for egg wash)

 

Instructions

  • Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  • Caramelize the Cabbage:
    • Heat olive oil and butter in an ovenproof skillet over medium heat.
    • Add the cabbage and cook, stirring, for 8–10 minutes until it softens and starts to caramelize.
    • Stir in honey, balsamic vinegar, thyme, salt, and pepper, and cook for an additional 2–3 minutes.
  • Assemble the Tarte Tatin:
    • Spread the cabbage evenly in the skillet.
    • Lay the puff pastry sheet over the top, tucking the edges into the skillet.
    • Brush the pastry with the beaten egg.
  • Bake:
    • Place the skillet in the preheated oven and bake for 25–30 minutes, or until the pastry is golden and puffed.
  • Invert and Serve:
    • Remove the skillet from the oven and let it cool for 5 minutes.
    • Carefully invert the tarte onto a serving plate.
