Ingredients:
- 1 small head of green cabbage, thinly sliced
- 1 small head of red cabbage (optional), thinly sliced
- 1 large carrot, grated
- 1/4 cup fresh parsley, chopped
- 1/4 cup green onions, thinly sliced
- 1/4 cup sunflower seeds (optional)
For the Dressing:
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar or lemon juice
- 1 tbsp honey or maple syrup
- 1 tsp Dijon mustard (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Prepare the Vegetables:
- Thinly slice the cabbage using a knife or mandoline.
- Grate the carrot and chop the parsley and green onions.
- Make the Dressing:
- In a small bowl, whisk together olive oil, vinegar or lemon juice, honey, Dijon mustard, salt, and pepper.
- Combine Ingredients:
- In a large bowl, mix the cabbage, carrot, parsley, and green onions.
- Add the dressing and toss well to combine.
- Optional Toppings:
- Sprinkle with sunflower seeds or nuts for extra crunch.
- Serve:
- Let the salad sit for 10 minutes for flavors to meld, then serve fresh.
