Cabbage Salad Recipe

Preparation Time: 15 minutes

Ingredients:

  • 1 small head of green cabbage, thinly sliced
  • 1 small head of red cabbage (optional), thinly sliced
  • 1 large carrot, grated
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup green onions, thinly sliced
  • 1/4 cup sunflower seeds (optional)

For the Dressing:

  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar or lemon juice
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Prepare the Vegetables:
  • Thinly slice the cabbage using a knife or mandoline.
  • Grate the carrot and chop the parsley and green onions.
  1. Make the Dressing:
  • In a small bowl, whisk together olive oil, vinegar or lemon juice, honey, Dijon mustard, salt, and pepper.
  1. Combine Ingredients:
  • In a large bowl, mix the cabbage, carrot, parsley, and green onions.
  • Add the dressing and toss well to combine.
  1. Optional Toppings:
  • Sprinkle with sunflower seeds or nuts for extra crunch.
  1. Serve:
  • Let the salad sit for 10 minutes for flavors to meld, then serve fresh.
