Cooking Time: 15 Minutes
Ingredients:
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 small head of green cabbage, chopped
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable or chicken broth
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- Optional: 1 cup cooked beans or lentils for added protein
Instructions:
- Heat olive oil in a large pot over medium heat. Sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
- Add the cabbage and cook for 2–3 minutes, stirring occasionally.
- Stir in the diced tomatoes, broth, thyme, paprika, salt, and pepper. Bring the soup to a boil.
- Reduce heat to low, cover, and simmer for 20–25 minutes, or until the cabbage is tender.
- If using beans or lentils, stir them in during the last 5 minutes of cooking.
- Adjust seasoning as needed and serve hot with crusty bread.
