Cabbage Soup

Cooking Time: 15 Minutes

Ingredients:

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 small head of green cabbage, chopped
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: 1 cup cooked beans or lentils for added protein

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
  2. Add the cabbage and cook for 2–3 minutes, stirring occasionally.
  3. Stir in the diced tomatoes, broth, thyme, paprika, salt, and pepper. Bring the soup to a boil.
  4. Reduce heat to low, cover, and simmer for 20–25 minutes, or until the cabbage is tender.
  5. If using beans or lentils, stir them in during the last 5 minutes of cooking.
  6. Adjust seasoning as needed and serve hot with crusty bread.
