Cabbage Steaks with Garlic Herb Butter

Ingredients:

  • 1 medium green cabbage
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp lemon zest

Instructions:

  1. Prepare the Cabbage Steaks:
  • Preheat the oven to 400°F (200°C).
  • Slice the cabbage into 1-inch thick rounds, keeping the core intact to hold the slices together.
  • Arrange the slices on a parchment-lined baking sheet and brush both sides with olive oil. Season with salt and pepper.
  1. Roast the Cabbage:
  • Roast the cabbage slices in the preheated oven for 15 minutes. Flip them over and continue roasting for another 10–15 minutes until the edges are golden brown and crispy.
  1. Make the Garlic Herb Butter:
  • In a small bowl, combine softened butter, minced garlic, parsley, thyme, and lemon zest. Mix until well combined.
  1. Serve:
  • Remove the cabbage steaks from the oven and immediately spread a dollop of garlic herb butter on each slice. Let it melt and soak into the cabbage. Serve warm and enjoy!
