Ingredients:
For the Filling:
- 2 medium sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and black pepper, to taste
- 4 cups green cabbage, shredded
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 8 small corn or flour tortillas
For the Lime Crema:
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Toppings (optional):
- Fresh cilantro, chopped
- Sliced avocado
- Red onion, thinly sliced
- Hot sauce or salsa
Instructions:
- Roast the Sweet Potatoes:
Preheat the oven to 400°F (200°C). On a baking sheet, toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Roast for 20–25 minutes, or until tender and lightly browned, stirring halfway through.
- Sauté the Cabbage:
While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the garlic and sauté for 1 minute until fragrant. Add the shredded cabbage and sauté for 5–7 minutes, stirring occasionally, until softened. Stir in lime juice and season with salt and pepper.
- Make the Lime Crema:
In a small bowl, whisk together the sour cream or yogurt, lime juice, lime zest, garlic powder, salt, and pepper until smooth.
- Assemble the Tacos:
Warm the tortillas in a dry skillet or microwave. Once the sweet potatoes are roasted, assemble the tacos by adding a few spoonfuls of sautéed cabbage to each tortilla, followed by roasted sweet potatoes. Drizzle with lime crema and top with avocado, cilantro, red onion, and hot sauce, if desired.
