Fresh Spring Rolls with Cabbage

Fresh spring rolls with cabbage are a light, healthy, and refreshing appetizer or snack. Filled with crunchy cabbage, fresh vegetables, and optionally some protein, these rolls are paired with a savory peanut or soy dipping sauce for a burst of flavor. Ingredients:

For the Rolls:

  • 1 cup green cabbage, thinly shredded
  • 1 medium carrot, julienned
  • 1/2 cup cucumber, julienned
  • 1/2 cup red bell pepper, thinly sliced
  • 1/4 cup fresh cilantro or mint leaves
  • 1/4 cup cooked shrimp, shredded chicken, or tofu (optional)
  • 6–8 rice paper wrappers

For the Peanut Dipping Sauce:

  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/4 cup water (adjust for desired consistency)
  • 1 teaspoon lime juice or vinegar
  • 1/2 teaspoon chili flakes (optional)

Instructions:

  1. Prepare the Ingredients:
    Wash and prep all the vegetables. Arrange the shredded cabbage, carrots, cucumber, bell pepper, herbs, and protein in separate sections for easy assembly.
  2. Soften the Rice Paper Wrappers:
    Fill a large shallow dish or bowl with warm water. Submerge one rice paper wrapper for about 10 seconds until it softens. Place it on a clean, damp surface or kitchen towel.
  3. Assemble the Rolls:
    Place a small portion of cabbage, carrots, cucumber, bell pepper, and optional protein in the center of the wrapper. Add a few herbs for flavor. Fold the sides over the filling, then roll tightly from the bottom up. Repeat with the remaining wrappers and filling.
  4. Make the Dipping Sauce:
    In a small bowl, whisk together peanut butter, soy sauce, hoisin sauce, sesame oil, water, lime juice, and chili flakes (if using) until smooth. Adjust water for desired consistency.
  5. Serve:
    Arrange the rolls on a plate and serve with the dipping sauce on the side.
