Total Time: 50 minutes
Ingredients:
- 1 medium head of green or red cabbage, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 tablespoon honey or maple syrup
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- Salt and black pepper, to taste
- 1 sheet puff pastry, thawed
- 1 egg, lightly beaten (for egg wash)
Instructions:
- Preheat the Oven:
Preheat your oven to 375°F (190°C).
- Caramelize the Cabbage:
Heat olive oil and butter in an ovenproof skillet over medium heat. Add the cabbage and cook, stirring, for 8–10 minutes until it softens and starts to caramelize. Stir in honey, balsamic vinegar, thyme, salt, and pepper, and cook for an additional 2–3 minutes.
- Assemble the Tarte Tatin:
Spread the cabbage evenly in the skillet. Lay the puff pastry sheet over the top, tucking the edges into the skillet. Brush the pastry with the beaten egg.
- Bake:
Place the skillet in the preheated oven and bake for 25–30 minutes, or until the pastry is golden and puffed.
- Invert and Serve:
Remove the skillet from the oven and let it cool for 5 minutes. Carefully invert the tarte onto a serving plate.
